Egg Salad Sandwiches

Easter has come and gone...and yet I still have a fridge full of hard-boiled eggs.  Sure it's fun making Easter eggs with your little ones...Well, it seems fun to make Easter eggs with your little ones until they get bored after 10 minutes, disappear on you, leaving you with half colored eggs, bowls of dye and a mess that always makes you say ..."We're not doing this next year."

 That being said, I still have a fridge full of hard boiled eggs.  What to do, what to do... How about making something easy with them?  Egg Salad.


Here's what you'll need:
9 hard boiled eggs, peeled and roughly chopped
1/2 cup plus 2 tablespoons mayonnaise
1 tablespoon yellow mustard
1/2 bunch green onions, minced (only green tops)
1/2 teaspoon paprika
Salt and pepper to taste
Crusty rolls
Tomato
Lettuce

Throw all of your ingredients into a medium glass bowl.  Using a pastry cutter, mix together while chopping the eggs.


Taste it and add more salt and pepper if desired.

Place on crusty rolls and pair with tomato and lettuce if desired.

That's it..... by far the easiest recipe I've ever posted.  And now you know what to do with all those pastel eggs taking up valuable space in your fridge.
