Oh Crap.... I forgot to plan dinner
You ever been to the market with no idea what to cook for dinner? Happens to me at least three times a week, believe it or not. I have intentions all day of planning out dinner and somedays, that actually happens. On other days, I find myself already at school picking up my daughter and heading to the grocery store with "what to make for dinner anxiety" boiling in the pit of my stomach. I used to wander the store aimlessly in hopes that some piece of meat or a colorful vegetable would inspire me and save dinner!! That's usely when I would end up in the frozen food section and shamefully grab a dinner-in-a-bag. How could I do such a thing?! I have the desire, the know how, and the time to cook...what could my family possibly be getting out of this no doubt salt packed, preservative jammed bag of "food'?" Don't get me wrong! There are days that are busy and hectic enough to call for a little help with dinner. I'm not saying everything has to be from scratch and started in the a.m. just to be done before the dinner bell rings. No no no...however, when shortcutting dinner, I like to still use as many fresh ingredients as possible (unless of course when using frozen vegetables or fuits that have nothing added). I'm going to tell you my top secret ingredient for "oh crap... I forgot to plan dinner" nights: the ready to take home Rotisserie chicken. The things you can do with this little bag of magic is endless! And no no no...don't just serve that bird on a platter at dinner. Yawn...boring. (unless you were to plan on making a fabulous homemade gravy to go with). What that little bird can become is infinite. I'll show you my top ways to turn the foul into your favorite dinner.
