I made this tonight with some leftovers in my fridge. The entire meal (feeds 5-6 people) cost me a total of $25 dollars and took maybe 25 minutes. I dare you to order chinese takeout for the same amount of people and tell me I didn't beat price and time by half!!!
Pork Noodle Stir Fry
2 tablespoons vegetable oil
Pork and Seeds Pork (or Char Su Pork) Sliced thinly
1 1/2 tablespoons grated fresh ginger
1-2 garlic cloves, grated
1 bunch green onion, diced into 1 inch pieces
1 1/2 cups sugar snap peas
3/4 lb cremini mushrooms, stems removed and sliced
Sauce:
4 tablespoons oyster sauce
1 1/2 tablespoons soy sauce
4 teaspoons hoisin sauce
1 package dried chinese chow mein noodles
For the sauce... combine all sauce ingredients, whisk well, and set aside.
Boil water and add dried noodles. Let boil 3 minutes. Drain, then rinse noodles under cool water.
Meanwhile, in a large saute pan or wok over HIGH heat, add the oil. When oil is glistening, add the garlic and ginger. Stir and cook just for a few seconds. Then add the green onion, mushrooms, peas, and pork. Cook over high heat until mushrooms have reduced in size and have began to caramelize. MAKE SURE YOU STIR THIS OFTEN TO PREVENT ANY BURNING... Once the veggies and pork are done, add the sauce mixture and stir well to incorperate. Turn off heat.
Divide washed noodles into bowls and top with a ladle of the pork and veggie mixture. SERVE!!!
My family just loved this tonight. They didn't even talk much during dinner. That's what being a mommy is all about. :)
