I found this idea on Pinterest. The Pin said to slice a potato almost all the way through, making thin slices along the entire potato and to bake for 40 minutes at 425 F. It looked so yummy, I thought I'd give it a go.
After slicing, I decide to put slabs of butter into about 4 of the slices (I know, so bad but oh so good) drizzled all over with extra virgin olive oil, gave it a healthy sprinkling of salt and pepper and tossed into the oven (on a foil lined baking sheet, of course). After about 30 minutes, I added more butter. Don't judge me..I like butter. I cooked the potato for about an hour, removed from the oven and topped with crumbled bacon and parsley. If I had any sour cream in the fridge, that would've found it's way on top too.
