Philly Cheesesteak Sandwiches--Melty, Stringy Goodness
So my man made oh so yummy pot roast last night, and as usual, we had tons of left overs. Most leftovers call for reheated and re eating the same old dish. For instance, how can you turn leftover spaghetti into something totally new? Go ahead...think about it. PS..if you actually figure something out, I'd love to hear about it.

Left over pot roast can be turned into many new exciting meals. This time, I chose to make Philly cheese steak sandwiches. They were so very yummy, especially with the onion rings along side them. (I just bought frozen onion rings since it's a week night and digging out the deep fryer and gallon of oil is too big a production on Wednesday night.) To make the phillies:
1 tablespoon extra virgin olive oil
1 tablespoon unsalted butter
1 onion, thinly sliced
1 green bell pepper, thinly sliced
12 oz sliced button mushrooms
Salt and pepper
Leftover pot roast
1/3 cup beef stock
Hoagie rolls
Mayonnaise
Butter
Sliced Swiss cheese
Sliced provolone cheese
Aluminum foil
Place a heavy, nonstick stick skillet over medium heat. Add your oil and butter, then your onions and peppers. Cook, stirring occasionally under tender...about 10 minutes. Add your mushrooms and cook until softened and caramelized..about another 5 minutes. Take off heat. Preheat oven to 350 F.
Put your leftover pot roast in a microwavable container and pour in the beef stock (to ensure your meat won't dry out), place on a lid and microwave until warm/hot. You don't want it too hot that you cannot handle it. Take roast meat out of container and shred with knife and fork.
Start to build your hoagies. Spread mayo on top slice and softened butter on bottom slice. Place desired amount of roast meat on bottom half and top with onion mixture. Place one slice of Swiss and one slice of provolone on top of onion mixture. Place top of hoagie roll on the sandwich and smoosh down. (Helpful hint: if your hoagie bread seems dry and crusty, spritz with a bit of water.) Wrap individual sandwiches tightly in aluminum foil and place in preheated oven. Bake for about 15 minutes.
Remove your foiled sandwiches and let cool for 5 minutes before unwrapping and devouring.
