Holiday Cookies #2 - Maple Leaf Cookies

Looking for a unique cookie to bake to awe all your family and friends?  Lucky you...you've found it!  These maple leaf cookies taste like no other cookie you've had and are equally as beautiful.  This is also a recipe by Martha Stewart, so click here for the original recipe.  You'll need 4 to 5 inch maple leaf shaped cookie cutters.  Make sure to get some napkins handy to catch all that drool...

Preheat your oven to 325 F.
In a stand mixer, add two sticks softened butter, 1/2 cup granulated sugar, 1/2 cup brown sugar beat on medium high speed until smooth.  Add one egg yolk, wait til combined and then add 1/2 cup real maple syrup.  Once completely combined, turn speed to low and gradually add 3 cups sifted all purpose flour and 1/2 teaspoon kosher salt.




Make sure to scrape down the sides of the bowl.


Split your dough in half, form into disks, and wrap in saran wrap...chill for at least two hours.


Once chilled, take out of fridge and let sit for about 10 minutes to soften (this will make the rolling process a bit easier.)  Flour your surface well and flour your rolling pin too.



Roll out your dough until it's about 1/4 of an inch thick.  Here's a trick I learned a long time ago to ensure your don't waste too much dough in the cutting process.  Place all your cookie cutters on the dough and position as closely together as possible.  This way, you'll get as many cuts as the dough will allow. 
Continue cutting until you can no longer....smoosh up remaining dough, flour and roll out again.  Cut more cookies!  Each disk (remember, you should have two) should render about 1 dozen cookies.
Place your cute little maple leafs on a silt pad lined cookie sheet and bake for 13 minutes, rotating the cookie sheet halfway through cooking.
After 13 minutes, remove cookies from oven and gently take silt pads off cookies sheets and onto wire racks.  Wait a couple of minutes and gently brush each cookie with real maple syrup.

Immediately sprinkle the tops with sanding sugar.


Serve these with hot coffee and snuggies.....Yay!
