Rotisserie Chicken #1 - Chicken Caesar Salad

What to pick up at the store:

Romaine lettuce
Cherry tomatoes
Croutons (any kind you like)
Parmigiano Regiano
Caesar Dressing (My favorite is Cardini's)
Baget (french or italian)
Premade Hot Rotisserie Chicken (plain)

When you get home, let your chicken cool enough to be handled.  Take off skin and discard.(This happens to be my favorite part of the chicken, however lots of fat a calories reside in this little slice of heaven).  Shred the chicken with your fingers.  Just pull off chunks of meat and tear into bite size pieces.  Go ahead...do the whole chicken.  Place chicken meat into a bowl or tupperware container and set aside.  Chop your romaine into equally bite size pieces and wash.  (One of my favorite kitchen gadgets is the salad spinner.  A must have if you're into greens :)  Place your washed and dried lettuce into a large salad bowl, then add cherry tomatoes, chicken, and croutons.  Add enough dressing to compliment your salad...do not make your salad swim in it.  Toss with two large spoons or your salad forks.  Plate the salads then shave large pieces of parmigiano regiano over each.  Serve with sliced bread - either with butter or olive oil and balsmamic vinegarette(this happens to be my daughter's favorite way to eat bread.)
