Ingredients
Rotisserie Chicken (Plain)
1 bunch cilantro, chopped
1 large jalapeno or serrano pepper, minced
4 garlic cloves, minced
1/2 teaspoon dried oregano
5 tablespoons extra virgin olive oil
Salt and pepper
1/3 cup dry sherry
1 large red onion, sliced
your favorite tortillas (preferably flour)
monterey jack cheese (shredded)
cooking spray
Start by ripping that bird apart. Yup, just like in the last recipe. Dive in with your hands (remember to discard the skin) and tear the chicken meat into shreds or bite size pieces and set aside. Place 2 tablespoons of extra virgin olive oil into a large skillet. Add your sliced red onions (a little salt and pepper) and cook on med/low heat until caramelized. This takes about 10 to 15 minutes and make sure you give it an occasional stir so nothing burns. Once the onions are done, transfer them to a paper towel lined plate.
Without wiping out the pan, add the remaining extra virgin olive oil, turn up heat to medium, and add your chicken. Cook for a couple of minutes, stirring occasionally, then add the cilantro, minced pepper, garlic, oregano and flavor with salt and pepper. Cook for another 5 minutes (remember to stir.) Then add your sherry. If you are cooking on a gas stove, please remove your pan from the flame before adding the sherry, then once incorperated, return to flame. Continue cooking until most of the sherry is absorbed.
Place the chicken mixture in a bowl and mix in the onions. Now take a paper towel and wipe out the pan. Add some cooking spray and place a tortilla in the pan. Sprinkle with about a 1/2 cup of cheese. Next add 1/2 cup of the chicken mixture. Then some more cheese (I really really really love cheese). Then top with another tortilla. Heat on med/high heat until bottom tortilla is starting crisp. Carefully flip and continue until other side is crisp. (I like to press down on the quesadilla with a spatula while in cooks). Remove from pan and repeat until you have as many quesadillas as your heart desires.
