I've been making these for years. They are one of my favorite sammy's to make alongside any soup during those cold winter months. I'm getting hungry just thinking about them!!!
This recipe makes about 4 sandwiches
Ingredients
1 rotisserie chicken (plain)
1 tablespoon unsalted butter
1 tablespoon extra virgin olive oil
16 oz sliced button mushrooms
1 tablespoon worcestershire sauce
Salt and pepper
8 slices white bread
8 thick slices good swiss cheese
Mayonaise
Butter spray (Like I can't believe it's not butter)
You should be used to this by now if you've read my other rotisserie chicken recipes. Hands in, tear meat into small pieces, set aside - and yes...get rid of that skin before you start indulging. In a small to medium saute pan, add your butter and olive oil over medium high heat. Add you mushrooms to the pan. (Hint...never ever "wash" your mushrooms. If they need cleaning, just use a damp cloth or paper towel to wipe them.) Add salt and pepper to taste, just a dash of each. After about 5 minutes and your mushrooms have started to reduce in size and they are beginning to caramelize, add the worcestershire and stir to incorporate. Continue cooking mushrooms until they've reduced dramatically and are yummy brown. Remove them from pan and set aside. Wipe out the pan with a paper towel.
Take two slices of bread and spread each slice with mayonaise. Place a slice of swiss cheese on each piece. Then pile on torn chicken on one slice and 1/4 of the mushrooms on the other slice. Place together to make your sandwich. Spray the butter spray on the top of the sandwich then place in heated sauted pan buttered side down. Take a spatula and press down on the sandwich. Now spray the exposed half of the sandwich and flip when the underside is nice and toasty. Press down again with your spatula. Remove from pan when done and repeat with the rest of the sandwiches. Yummy, cheesy, savory goodness. Serve by itself or alongside your favorite soup.
