Helen's New Year's Prime Rib---Easy Peesy

I would a lot of people think pulling off the most perfect prime rib is a near impossible task.  I used to be one of these folks until my boyfriend showed me how it's done.  He got this recipe from his sister Helen and ever since my first bite, this fancy dinner has made an appearance in our home every Holiday.  I would like to say it's a perfect dish for Christmas Eve or Day, but we usually reserve the mouth watering treat for New Year's Day...my man's birthday.  Get ready to impress all you know!!!

  Start with a 4 to 6 lb standing rib roast (with 4 ribs)
Let your roast sit on the counter for at least 1 hour to come to room temperature.  This way, your roast will cook evenly through.
Preheat your oven to 375 F.  Mix 2 tablespoons of Kosher Salt and 1 tablespoon of freshly cracked pepper together.  Drizzle your roast with 2 tablespoons extra virgin olive oil and rub it all over with your hands.  Then cover the whole roast (top and bottom) with the salt/pepper mixture.  Place the big hunk of meat onto a rack and into a roasting pan.  (The same kind you'd use to cook your Thanksgiving turkey.)  Place the whole thing into the preheated oven and set the timer for 1 hour.  When it has been 1 hour, turn off your timer AND TURN OFF YOUR OVEN.  DON"T TOUCH THAT OVEN DOOR!!!  You have to let the roast sit in the oven for 3 hours without ever opening the door.  My man is super cute and actually puts blue tape on the oven to remind all to steer clear!!
After three hours, turn the oven back on to 375 F and let the roast sit in there for 30 minutes to heat up.

Now take out your master piece and gently move it from the roasting pan and place it on a cutting board.  Whatever you do, do not cut into that meat until at 20 minutes have past.  You have to let the juices redistribute throughout.  Just look at that beauty!
